Cuando un cliente pide vegano, no le sacamos «el plato sin carne». Le sacamos un plato pensado de cero. Eso significa cocciones específicas, salsas vegetales con profundidad, técnicas asiáticas y levantinas que iluminan el producto granadino.
La Vega tiene una despensa enorme: tomate rosa, alcachofa violeta, calabacín redondo, espinaca de invierno. Trabajamos con productores locales que cosechan según la temporada.

Where we are: El Realejo, a step from the Alhambra
We are at Plaza de Fortuny 1, in the heart of El Realejo, Granada's old Jewish quarter. It is a five-minute walk to Plaza Nueva and about ten to the Alhambra. We have a terrace on the square itself, subject to season and availability, and much of the veg that reaches the table comes from the Granada Vega.
