We are not vegetarian. We treat vegetables as if we were.
When someone orders vegan we do not bring out "the dish without the meat". We bring out a dish designed from scratch: specific cooking methods, deep plant-based sauces and Asian and Levantine techniques that light up Granada produce.
The Vega has a huge larder: tomatoes, artichokes, courgettes, winter spinach. We work with local growers who harvest by the season.
